Another recipe post for you.
This time it is a lovely plum pie, which can be served with vanilla icecream for dessert, or with whipped cream or greek yoghurt with coffee for a lovely afternoon tea.
Plum Pie
Pastry
125g Butter
1/2 Cup Sugar
1 Teaspoon Baking Powder
2 Cups Flour
Pinch Salt
1 Egg
2 Tablespoons Milk
Filling
1 large tin Plums
A sprinkling Coconut
I use a food processor, it makes it much easier. For those who don't have one, it can easily be made in a large bowl.
Mix all ingredients together (if mixing by hand, use melted butter).
You should find the pastry all comes together into a workable texture. You should be able to take a spoonful and squeeze it, and it should not be crumbly or sticky.
Take large spoonfuls of mixture and use your hands to flatten out. Line the pie dish in this way.
If the plums have stones, put them into a bowl and get the stones out.
Chop up the plums roughly and spread over the pastry base. You can sprinkle on some coconut if you like.
Now, cover the plums with pastry in the same way as you made the base.
Bake at 180 C for about 20 minutes, or until golden brown.
