Apricot Slice

This biscuit-based slice was one of the first things I learnt to make when I was growing up. Its super easy to make, doesn't take any time in the oven and, of course, its yummy!

Apricot Slice

2 x 250g packets of plain biscuits
2 C dried apricots - chopped
1 tin sweetened condensed milk
250g butter
1 C brown sugar

Coconut - optional

Process the biscuits into fine crumbs using a food processor.  Combine the brown sugar, condensed milk and butter in a saucepan and stir over a low heat. When all the ingredients have melted together into a nice sauce consistency, pour over the crushed biscuits.  Mix through, and then spread into a slice tin.  Sprinkle with coconut if desired, and refrigerate until cool.

Enjoy!

Smudge Saturday: Green with Envy

My lovely kitten has been enjoying playing in the grass while I've been catching up on study.  The hubby has started renovating our kitchen so everything is in a huge mess and we're having to eat out for a while.  I'm super looking forward to painting it up and having a nice new look for our kitchen :)

What are you guys up to this weekend?

South Island: Duvauchelle

Duvauchelle is another little village in the Akaroa harbour.  While Akaroa itself was lovely, we camped up for the night here in Duvauchelle as it was a lot cheaper.

It was a lovely place, and we stayed in a very laid-back type of camp ground.

On the way back we stopped off at an orchard and feasted on the most delicious cherries and apricots!

On the road again

My all-time favourite piece of clothing is a floaty, floral print dress.  I have been living in such dresses all summer.

The vintage satchel is my favourite bag.  It is genuine leather and New Zealand made.  I picked it up one day when I was tagging along to an auction with my dad.  I basically found it in amongst different pieces of machinery and tools - definitely my luckiest find so far!

I found the denim shirt in the boys section of a small thrift store on our trip down South.  I love it, its nice to throw it on when I need an extra layer but don't want to wear a cardi.

What I'm wearing: Dress by Glassons, Denim Shirt - thrifted, Belt by Glassons, Boots by Dotti, Satchel - thrifted.
